1 CAN_driver can handle 24V and 15 A continuous with heatsink. That is pretty much. If you have a big motor (motor weight over 2 kg) and resistance around 1.6 ohm, that is a lot of torque. Have you already tested such setup?

I do not know and also do not know why it would be important. The gimbal parameters will need to be found for the setup you have and there is the automatic voltage drop compemsation that can be used for compensating the voltage drop.

You need enable the advanced data to see the encoder raw data. However you should see the reason for encoder read errors first. Likely too long or too close to other cables I2C cable.

5108 is not a huge motor :) What big motors provide is this kind of control, ability to move the camera fast. For stabilisation only, very small motors are enough when the gimbal is well constructed.

How to lock motors at home position
It can be only as much locked to the installation as your motors have torgue. The easiest way to do it is the follow mode. Just set higher speed, narrow working area and no free movement area, no expo and keep acceleration limit at 500 or higher.

Sounds like you basic setup is not correctly done and motor pole numbers are wrong. The gimbal needs to work well before encoder calibration and you need to set the number oof motor poles manually to the actual they are.

Questions about DC motors work with respect to current
Free (and fast) spinning motor does not consume much current. Current is consumed when you load the motor. How ever, even on the free spinning situation, if you do not provide enough current, the motor will not spin or spins very slowly.
