Inverted gimbal system - possible?
what your trying to do is 100% possible but you have not specified something very important the spot of the camera IMU on the hoop that your stabilizing! you need to figure that out

there is no advantage of 2 motors on 2 drivers! & it cost more money to do that.

lot of miss information here 2 motors will work in parallel no issues one controller (if you know what your doing ) you only need one encoder per axis ! You need proper hiy voltage controller this is from experience!

how do you check the Center YAW axis at the start-up? all you need to do is calibrate the giro with the yaw pointing in the correct direction that simple.

motor is not designed for this application such motors are designated BGC because they are specially wound for Brush less gimbals only! you need to select proper hardware!
