    How can I make the gimbal just point straight ahead on a handheld gimbal? I will control the pan with my hands.

    There is many options; Joystick, orienting in non follow mode first and then activating follow mode, doing careful follow offset calibration...

    Joystick is not an option (my gimbal has come off a quadcopter) could you elaborate on careful follow offset calibration. Thank you

    It is on Follow tab, Offset Yaw. I do not use it. You could also use remote controller to set the yaw or try INIT.ANGLE on RC tab.
